Well, I stumbled onto your wine blog from wineblogwatch.arrr.net, and saw that you were making a batch of blackcurrant wine! How exciting! I have always had a special curiousity for blackcurrants.

Sunni, thanks for your visit and comments. Yes! That idea of blackcurrant wine in truffle centers sounds wonderful. Wonder if there is a way I can get a bottle to you to try this.

Sulphite is used to protect the wine from bacteria, long term. For those who think that this is a “modern” method of protecting wine, indeed it is not all that modern. Early winemakers possibly didn’t know how or why it worked, but they would burn sulphite into the barrels that the wine was aged in, to protect it from becoming vinegar.
