I always add the bentonite at the end of the winemaking process, only because the instructions for the very first wine kit I made said to do it that way, and the wine turned out great. So I have been afraid to add it in the beginning, even though I have heard that may be a better way. And now I know the reasoning. I sort of felt that maybe the yeast might be affected negatively by adding the bentonite early. But I will have to try it that way. I&#039;ve tried different fining agents, but, in my opinion, bentonite seems to do the best job. Looking forward to more articles. -Finger Lakes Weekend Wino
